1 pound button mushrooms, cut the large ones in half
2 tablespoons capers, chopped
3 garlic cloves, minced
2 tablespoon olive oil
3 tablespoons plant-based butter
2 tablespoons fresh lemon juice
1/4 cup parsley, chopped
Preheat oven to 450°F. In a bowl combine the mushrooms, capers, garlic, oil- toss to coat. Pour into a prepared baking dish that has been sprayed with non stick cooking spray.
Dot the mushrooms with the pieces of plant-based butter and bake for 15-20 minutes,
give the mushrooms a stir halfway through. Take the mushrooms out and
toss them in the lemon juice and parsley before serving.
